Jessica Earick launched Eggmann's Eatery with her sister, Kristina Hagemann, in 2020, an uncertain time for the restaurant industry.
But two years later, Earkick told the Mount Vernon News the Centerburg restaurant is still thriving.
"Everything has been going awesome," said Earick, the restaurant's lead chef. "The support of the community has really kept us going. It's going really, really well."
The original location was at the Table Rock Golf Club. It's now at the nearby Wyandot Golf Course.
"It's' perfect for breakfast and lunch," Earick said. "It's nice and bright with a beautiful view of the golf course."
In the Centerburg area, the restaurant has found capable employees, which might not have been the case in a larger city such as Columbus or even Mount Vernon, Earick said.
"There is really amazing talent just right here in the village," she said. "I've got a full kitchen staff, some great kids who have done really well. In the front of the house, we have a ton of people who are in high school that work here on the weekends. This is their first job and they have impressed us so much with how well they have picked up our philosophy and our vision for the restaurant."
But then there is inflation, which has been a challenge for restaurants who want to keep prices affordable for customers, Earick said.
One solution has been to use products, such as blueberries, in more than one dish.
"That way, I can buy in bigger bulks to get the discount," Earick said.
The past two years, during the pandemic, have not only been challenging times but also learning times for restaurateurs, she said.
"We look at what's going on as a hurdle," Earick said. "So we look at how we can get through the best way possible."
The people of Centerburg appreciate the restaurant, she added.
"Absolutely everybody appreciates our hometown touch, our menu, our services and the effort we put into it," Earick said.
