As you walk into Smithhisler Meats in Mount Vernon, expect a different experience and different products than a typical big-box store.
For one thing, you can still find dry-aged beef. The aging process removes water from the beef, enhancing the taste.
“Customers tell us it just tastes different than the meat you buy at the grocery store,” said Wayne Zollars, Smithhisler’s owner since 1998.
Once the beef has aged, a butcher will customize it for the customer, turning it into ground beef, roast or steaks.
“At some of the chain stores, they don’t even have meat cutters anymore,” Zollars said. “They buy packaged meat and then display it.”
Smithhistler sells more than meat. It offers cheeses produced by the Amish community. There is also fresh produce, frozen fruits, French fries, and even appetizers such as battered mushrooms and mozzarella cheese sticks.
“We’ve incorporated a lot from selling to restaurants over the years,” Zollars said. The store also has a deli with sandwich meats and salads.
Customers also appreciate the personal service.
“We wait on each customer individually,” Zollars said. “We know a lot of customers by first name. They like that personal service.”
