When eaten raw, green tomatoes, which are unripened tomatoes, have a very bitter, sour flavor. But, once fried, the flavor completely transforms, resembling a mild fried pickle. Fried green tomatoes are often eaten as a side dish at barbecues or between bread as a sandwich.
