MOUNT VERNON — With warm weather quickly approaching, local herb gardens will soon be ripe for picking and bright-green basil leaves will be available in abundance. Rather than drying these basil leaves or using them solely for cooking, why not harness their light, fresh, earthy flavor by crafting a fragrant, healthy salad?

Caprese salad is an iconic, simple Italian salad, famed for its representation of the Italian flag colors, green, white and red, through its three staple ingredients: Fresh basil leaves, mozzarella cheese and tomatoes. This bold, beautiful salad can be served in a variety of different ways as a main course or as a side dish with paninis, pastas and soups.
