MOUNT VERNON — With Easter right around the corner, Pinterest, an artsy image sharing website, is exploding with photos and tutorials regarding fun, cute and creative Easter dessert ideas. Pictures of eggs-in-a-basket cookies, pastel chocolate covered strawberries and cookie dough truffles litter the site. After searching through pages of eye-candy, one Easter treat in particular stole my attention: Easter bunny cupcakes. These popular little cakes were just too adorable to pass up; I knew I had to take a crack at baking some.
In the photos, these bunny-shaped desserts appeared to consist of vanilla cupcakes, topped with swirly-white buttercream frosting; the ears were halved marshmallows, dusted in sprinkles or colored sugar; and little pink candies or pastel M&Ms served as noses. In an attempt to add my own unique twist to the bunny cupcakes, I decided to color my batter in a festive neon-swirl design.
