Rick Rollinger, chef and director of catering at Smithhisler Meats Inc., 8835 Columbus Road, told the News that the secret to preparing a delicious turkey depends on the type of turkey purchased, the marinade and the cooking method. Rollinger is a stickler for using fresh, free-range turkeys.
